Guava Parmesan Acorn Squash Rings from the kitchen of Monica Bliss

This interesting side dish lights up any plate from a warming Autumn dinner to your holiday feasts.

New Lebanon— Ever since I was a child, I have loved acorn squash. My family made it the traditional way, baked in the oven filled with butter, brown sugar, and cinnamon. I still love it like this and prepare it this way several times each fall and winter. Wanting to eat it more often, I found a delightful recipe for Parmesan Acorn Squash Rings online. Craving even more variety, and loving the sweetness of my family’s recipe, I incorporated sweet Guava fruit spread. Guava and Parmesan pair well, so naturally, it’s delicious! This interesting side dish lights up any plate from a warming Autumn dinner to your holiday feasts.

Guava Parmesan Acorn Squash Rings

2 acorn squash, de-seeded and sliced into 1/2” rings
1/4 cup olive oil
1/4 cup guava fruit spread or jam, melted in microwave + some for drizzling
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper
2 cups parmesan, freshly grated

Preheat the oven to 425, and cover a sheet pan with parchment paper.

Combine oil, melted guava fruit spread, salt, garlic powder, black pepper, crushed red pepper in a large bowl. 

Place grated parmesan onto a dish.

“Bread” the squash rings by dipping them into the oil mixture and then the cheese on both sides. Place cheese-covered squash rings onto parchment paper covered sheet pan. Sprinkle any remaining cheese over the top of each ring.

Bake for 20-25 minutes. Drizzle with melted guava fruit spread, and serve.
