A recipe for Baked Oatmeal from the kitchen of Barbara Beach

I had written a note on the recipe: "deelish," so, I decided it was perfect for this cold, wintery Sunday morning.

Sheffield— I was looking through my stash of breakfast recipes, and I came upon a recipe for Baked Oatmeal that my friend Judy Cassarino gave to me years ago. I had written a note on the recipe: “deelish,” so, I decided it was perfect for this cold, wintery Sunday morning. It comes out like a big oatmeal muffin inside of a cast iron pan and is very tasty, especially since I added my favorite treat, dried cranberries.

Baked Oatmeal

1 1/2 cups milk
2 eggs
1 tablespoon vanilla
2 tablespoons vegetable oil
2 1/2 cups oatmeal
3/4 cup packed brown sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 cup dried cranberries

Mix together dry ingredients and set aside.

Whisk together wet ingredients. 

Add dry ingredients to wet, and let stand for 15 minutes.

Pour into a greased pan. Bake at 350 for 40 minutes.
