New Lebanon— Move over, turkey sandwiches and tetrazzini! I found this recipe for Leftover Turkey and Mashed Potato Samosas with Mango Chutney in a grocery store publication, and I’ve been making it on the day after Thanksgiving ever since. It’s my favorite way to use Thanksgiving leftovers. It’s easy, different, and wonderfully delicious. You can use store bought chutney or make your own. Here is a link to my recipe, which I highly recommend using for this dish. You can use store-bought or homemade crust.

Leftover Turkey and Mashed Potato Samosas with Mango Chutney
1 cup leftover turkey, chopped up
1 cup leftover mashed potatoes
1/2 cup mango chutney plus more for serving
1 pie crust dough, home-made or store-bought
Combine turkey, mashed potatoes, and 1/2 cup chutney in a bowl and mix.
Roll a pie crust into 8 pieces.
Top each piece with 1/8th of the turkey mixture.
Wet-edges and fold-up into purses.
Bake at 400 degrees for 35 minutes and serve with mango chutney.
