Sheffield— I thought I had about the best blueberry muffin recipe in the world until my friend Peg told me about the muffins served in Boston’s Jordan Marsh Department Store. She went round-and-round and eventually got the recipe, shared it with me, and now, I share it with you.
Jordan Marsh Blueberry Muffins
1/2 cup butter, softened
1 3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 cup flour
1/2 teaspoon salt
2 teaspoon baking powder
1/2 cup milk
1/2 cup blueberries, crushed
1 1/2 cup blueberries, whole
sugar for sprinkling
Preheat the oven to 375 degrees. Line or oil muffin tins.Â
Using an electric mixer, cream the butter and sugar.
Sift the flour, baking powder, and salt.
Add dry mixture to the creamed mixture alternately with the milk.
Add crushed blueberries to the mixture, then fold in the whole blueberries.
Fill the muffin tins and sprinkle with sugar.Â
Bake for 25 to 30 minutes.
Makes 12 muffins.Â
