Bimi’s Canteen and Bar seasonal fondue service is not to be missed

The fondue is their house blend of Gruyere, Raclette, Challerhocker, and Ur Eiche, and it is very clear that these people know cheese. This was by far the very best cheese fondue I have ever had.

Chatham, N.Y.— I have a special place in my heart for the Village of Chatham. About a decade ago, I spent some time in the area while performing at The Ghent Playhouse. Also, as I am a resident of Columbia County, the charming town has been host to my children’s soccer games and chorus concerts. I’ve visited a few restaurants in the area over the years, and I’m happy to report that there is a new offering on Chatham’s Main Street, Bimi’s Canteen and Bar, from the owners of the adjacent Bimi’s Cheese Shop, which has been a mainstay in Chatham’s quaint downtown for a decade. The owners expanded into the neighboring space to offer their customers “a place to gather, relax, and share a meal or a pint.” 

I was thrilled to receive an invitation to explore the highly anticipated seasonal fondue service at Bimi’s Canteen, which is running through March 14th. Happy to accept, I was impressed from my first impression of the restaurant which was gaily lit up in the dark winter evening. The candlelit walkway into the building was an especially nice touch. Once inside, the beauty of the space and the classy yet cozy atmosphere were immediately engaging. The vibe was welcoming with an exposed brick, denim, and leather motif. The gorgeous space felt rustic yet modern, elegant yet comfortable, exclusive yet inclusive, and the music was vibing, too.

We were sat at my favorite type of table – a half booth. The table was beautifully appointed and the menu was the loveliest menu I’ve ever held in my hand. I was in the mood for a glass of red wine; Sloane, our lovely server, suggested a 2021 B.R. Cohn Cabernet Sauvignon. My husband ordered the Aviation (gin, maraschino liqueur, lemon, creme de violet) off of the Standard Cocktail menu, which he enjoyed. He later enjoyed a local IPA, the Nor’Eastah from the neighboring Chatham Brewery, which he said was very good.

We ordered The Deluxe Fondue service which is considered an appetizer for four or an entree for two. The cheese fondue was served with apple slices, adorable carrots and radishes straight out of a Beatrix Potter garden, vibrant purple cauliflower, house-made meatballs, merguez sausage, perfectly cooked flank steak, smashed potatoes, roasted Brussels sprouts, cornichons, and baguette cubes. The fondue is their house blend of Gruyere, Raclette, Challerhocker, and Ur Eiche, and it is very clear that these people know cheese. This was by far the very best cheese fondue I have ever had. Exquisitely presented, this was a feast for our eyes and our bellies.

Also offered is The Simple Fondue service served with bread, which is considered an appetizer for two or a “ridiculously delicious bar snack.” In any event, fondue is meant to be shared. Co-owner of Bimi’s, Ellen Waggett, said that “Fondue is the literal embodiment of our motto ‘Community. Camaraderie. Cheese.’”

After thoroughly enjoying ourselves, with happy bellies and happy hearts, we had just enough room left over for the peach galette for two, a rustic tart topped with whipped cream. Hearty yet simple, paired with coffee, it was a perfect note on which to end our evening.

Kudos to executive Chef Jesse Curtin. His website bio says that he “approaches his menu with equal reverence for both the culinary and agricultural elements in the kitchen. His zen-like focus serves him well, as there is no ego at play—just a dedication to exciting dishes made with the freshest local ingredients.” This was apparent in the presentation and in every bite we took. 

Bimi’s Canteen and Bar is located at 19 Main Street in Chatham, N.Y. I highly recommend their seasonal fondue service, which runs through March 14th, for a date night, anniversary, or your Valentine’s Day celebration. I was so impressed that I’m returning in February to celebrate Galentine’s Day with my best friend. The menu can be viewed online. Open Thursday through Monday, reservations can be made online. Reservations are strongly recommended, but walk-ins are accepted in their downstairs speakeasy.
