New Lebanon— My chewy and crispy Shrimp & Scallion Dumplings is a fast and easy recipe that beats takeout any night of the week. A few of these delicious dumplings, served with a sides of vegetables like broccoli, green beans, cucumbers, or a green salad, makes a wonderful dinner that is fun to eat, filling, and highly nutritious.

Shrimp & Scallion Dumplings with Spicy Dipping Sauce
Dumplings:
1 pound shrimp, peeled, deveined, and chopped
1 bunch of scallions, chopped, reserve a small portion for the sauce
2 teaspoons of garlic, paste or minced
2 tablespoons of soy sauce
2 teaspoons of sesame oil
1 teaspoon oyster sauce
1/2 teaspoon salt
1/2 teaspoon pepper
10 rice paper wrappers
1 tablespoon olive oil
Spicy Dipping Sauce:
1/4 cup soy sauce
1 tablespoon chili crisp
1 teaspoon sesame oil
reserved chopped scallions
Preheat the oven to 400 degrees.
In a bowl, combine all dumpling ingredients (expect the rice paper wrappers and olive oil) to make the filling.
Submerge a rice paper wrapper into water for 15 seconds, fill with 1/10th of the filling, and fold or roll into a shape of your choosing. Repeat 10 times.
Brush both sides of each dumpling with olive oil, place on a cookie sheet, and bake on 400 degrees for 12 minutes. Open oven, increase temperature to broil, and broil with oven door open for three minutes. Makes 10 dumplings.
While the dumplings are baking, combine dipping sauce ingredients.
Serve the dumplings warm with a side of sauce.
TIPS:
Defrost frozen shrimp ahead of time to make for a very quick meal preparation.
