A recipe for Mayonnaise from the kitchen of Barbara Beach

I find it very satisfying to make  homemade jams and condiments like marmalade, chutney, aioli, and now mayonnaise.

Sheffield— I have always wanted to make my own mayonnaise. I find it very satisfying to make  homemade jams and condiments like marmalade, chutney, aioli, and now mayonnaise. It is so delicious and easy, too.

Mayonnaise

1 egg
1 Tablespoon mustard, I use Dijon.
1 Tablespoon vinegar
1/4 teaspoon salt
1 cup oil, I use vegetable.
1-2 lemons, juiced

Using an emulsion (or regular) blender, blend for about 1 minute until it looks like mayonnaise.  

Add more lemon juice or salt to taste.
